Why Grinding Temperature Matters
When spices are ground, friction generates heat. In conventional grinding, this heat can reach 80–100°C — high enough to evaporate the volatile oils that give spices their flavor, color, and medicinal properties.
Turmeric's curcumin, chilli's capsaicin, coriander's linalool — these are the compounds that make spices valuable. If your grinding process destroys them, what's left is essentially colored dust.
How Most Brands Do It
The industry standard is hammer milling or pin milling — high-speed mechanical grinders:
- Temperatures soar above 80°C during grinding
- Up to 30–40% of volatile oils can be lost
- The resulting powder has diminished flavor and aroma
- Some brands add artificial colors to compensate
- Artificial flavoring is sometimes added to mask the flat taste

How to Tell the Difference
Simple test: take a pinch of Ahaarika turmeric and any other brand. Rub both between your fingers. Ahaarika powder will stain deeper yellow, release a stronger aroma, and feel slightly coarser.
