Why Drying Matters
After harvesting, raw spices contain 60–80% moisture. If this moisture isn't reduced properly, the spices will rot, develop fungus, or lose their essential oils. The drying process is critical — it determines the shelf life, aroma, color, and potency of the final product.
How Most Brands Do It
To save time and increase throughput, most large-scale food companies use industrial hot-air dryers or mechanical dehydrators. While these are fast (drying in hours instead of days), they come with significant trade-offs:
- High temperatures (often above 60°C) destroy volatile essential oils
- Uneven drying leads to inconsistent moisture levels
- Artificial drying agents are sometimes used to speed up the process
- The result is a spice that looks right but smells weaker and tastes flatter
How Ahaarika Does It Differently
We use traditional open-air sun drying — the same method that Indian farmers have used for centuries:
- Spread & Expose: Fresh spices are spread in thin, even layers on clean drying beds under direct sunlight
- Slow Reduction: Over 3–7 days, the sun gradually reduces moisture to the ideal 8–12% range
